In colonial Brazil, explains José Bezerra Arimathea, a professor at the Federal University of Ceará, the tapioca was consumed as an accompaniment to fish and game meat. “Replacing white bread and wheat became consumed with milk, meat or egg.”
In northeastern backlands, the practice was to use butter. In coastal sugarcane, coconut milk, sugar and banana leaves as “packing.”
The hardest part is missing the birthplace of tapioca. The first written accounts referring to northern Brazil, Northeast today, but are inaccurate.
